By Dornoch BID Ltd. Part of the Autumn Highland Festival collection
Join Theo (Links House at Royal Dornoch) and Simon (UHI) for a delicious and inspiring cookery demonstration celebrating one of the Highlands’ finest autumn ingredients – Highland venison.
We are delighted to once again welcome two outstanding chefs to the stage:
Theo, Head Chef at the acclaimed Links House at Royal Dornoch, renowned for his refined approach to local, seasonal produce, and
Simon, Professional Cookery & Hospitality Lecturer at UHI, bringing expert culinary knowledge, practical techniques and a passion for teaching.
Together, Theo and Simon will showcase a creative take on a traditional British favourite, preparing a slow-braised Highland venison pie with a twist. Using a traditional hot water crust pastry, they’ll demonstrate how to create a delicious cold venison pie inspired by the classic pork pie.
Along the way, they’ll also share simple techniques that you can easily recreate at home, including:
To make the experience even more enjoyable, plenty of individual venison pies will be prepared in advance, giving every attendee the opportunity to enjoy one during the event or take it home afterwards.
Whether you’re a keen home cook, a food lover, or simply looking to enjoy a relaxed and flavour-filled event during the Autumn Highland Festival, this demonstration promises to be informative, interactive and packed with seasonal inspiration.
